Soft Gooey Biscoff Chocolate Chip Cookies ♡

 


This recipe makes 8-9 large cookies ♡

Cookies
1 and 1/2 cup (320g) brown sugar
1/4 cup (50g) sugar
1 cup (227g) melted butter (salted or unsalted)
2 eggs
2 tsp vanilla extract
2 tbsp milk
1/3 cup (85g) Biscoff cookie butter
3 cups (375g) all-purpose flour
1 tsp salt
3/4 tsp baking soda
1/2 tsp baking powder
1 tsp cornstarch
10 crushed biscoff cookies (more for topping cookies)
1/2 cup (85g) chocolate chips
1/2 a white chocolate bar (I used Lindt)
2 tbsp melted biscoff cookie butter (for topping cookies)

Bake at 350F (177C) for 12 minutes

📝 Notes
♡ I used a 2.5 tbsp cookie scoop
♡ Each cookie had around 4-5 tbsp of the cookie dough (to get around 8-9 cookies)
♡ I did not refrigerate my dough, but if you live in a warm environment or your dough looks wet, then refrigerate for at least 1 hour before baking
♡ If your cookies tend to spread, I like to use a large cookie cutter to swirl the cookies straight out of the oven :)
♡ The cookies are supposed to look undercooked fresh out of the oven!
