Key lime pie cookies with the softest graham cracker cookie ♡
Graham Cracker Cookies
1/2 cup (113g) softened butter
3/4 cup (150g) brown sugar (I used light brown sugar)
1 egg
1 tsp (5ml) vanilla extract
1 tsp lime zest (half a lime)
1 cup + 2 tbsp (135g) all-purpose flour
1 cup graham cracker crumbs (6 full sheets crushed)
1 tsp (2.5g) cornstarch
1/2 tsp (2g) baking soda
1/4 tsp (1g) baking powder
1/2 tsp (3g) salt
♡ Divide cookie dough between 7 cookies
♡ Roll into balls and make a light indent with a 1 tbsp sized measuring spoon
♡ Bake at 350F (177C) for 10 minutes
♡ Remove cookies from oven and make another indent using a 1/3 measuring cup
♡ Bake for another 1-2 minutes

Key Lime Filling
6oz softened cream cheese
1/2 cup (153g) sweetened condensed milk
1 tbsp (6g) lime zest
1/4 cup (60g) fresh lime juice (about 3 limes)
